You don't really know me. At all.
So how the Hell do you know what I am capable of, or whether or not I will do better or worse for your company than some other, younger, greener, less experienced, perhaps less literate and certainly less capable, candidates?

They are not making a judgement on you as a person, or even your actual capabilities as a employee, just on that bit of paper, since it is all they can see.
The only other way I can see would be to take every one on for a short trial, and then pick the best after that. Which would be fairer, but really time consuming for the business and the unsuccessful candidates.
